Ingredients list'
Moong Dal Ki Khasta Kachori (Serves - 5)
For Dough
All purpose flour (मैदा) - 2 cups
Salt (नमक) - 1 tsp
Carom Seed (अजवाईन) - 1½ tsp
Ghee (घी) - 2 tbsp
Water (पानी) - as required
For Stuffing
Moong Dal Dhuli (मूँग दल) - 1 cup
Cumin Seed (जीरा) - 2 tsp
Fennel Seeds (सौंफ) - 1 tbsp
Coriander Seed (साबुत धनिया) 2 tbsp
For Tempering
Oil (तेल) - 5 tbsp
Asafoetida (टींग) 1½ ton
Coriander Seed (साबुत धनिया)- 2 tbsp
Black Peppercorns (काली मिर्च) 1 tsp
Dried Red Chili (सुखी लाल मिर्च) 4-5 nos
For Tempering
Oil (तेल) - 5 tbsp
Asafoetida (हींग) - ½ tsp
Ginger, chopped (अदरक) - 2 tsp
Green chilli, chopped (हरि मिर्च) - 2 nos
Gram flour (बेसन) - 2 tbsp
Salt (नमक) - to taste
Red Chili Powder (लाल मिर्च पाउडर) - 1 tsp
Garam Masala (गरम मसाला) 1½ tsp
Coriander Powder (धनिया पाउडर)- 1 tbsp
Amchoor Powder (आमचूर पाउडर) - 1 tsp
Kasoori Methi leaves (कसूरी मेथी) - 2 large pinches
Oil (तेल) - for frying
Keep ready - sweet chutney mint chutney and fried green chilies.
RECIPE:
* For Masala, keep the pan on the flame, put Coriander Seeds, Fennel Seeds, Cumin Seeds. Roast them, then turn the flame off and take them out on a plate and coarsely grind them.
* For Filling, in the same pan, put some Oil, Cumin Seeds, Asafoetida, Chopped Green Chilli, Chopped Onion, Grounded Masala, Salt to taste, Turmeric Powder, Kashmiri Red Chilli Powder and mix them well. Then add Gram Flour to it and cook it well for 3-4 minutes. After then put Boiled & Mashed Potato, Powdered Sugar, Citric Acid. Mix them all & put Coriander Leaves. Take out the ready filling on a plate and keep it for cooling down. Then
make filling balls.
* For Dough, in a bowl, take some White Flour/ Maida, put Salt, crushed Carom Seeds, some Oil in it & mix them. Add Water gradually & bind the dough with light hands. Knead the dough very well, cover it and leave it for half an hour. Make Kachories as shown in the video by filling them. Then fry them in the medium heated Oil.
* For Sabji: In a pan, put Oil, Cumin Seeds, Anofontido chonned Dry Dod Chilli chonno
Then fry them in the medium heated Oil. * For Sabji: In a pan, put Oil, Cumin Seeds, Asafoetida, chopped Dry Red Chilli, chopped Green Chilli, Turmeric Powder, Kashmiri Red Chilli Powder, chopped Tomato, Salt to taste, Coriander Powder, Dried Mango Powder, Roasted Cumin Powder, Powdered Sugar, Garam Masala. Mix them and cook them on a slow flame. Then put Boiled Chickpea and Potato, some Water and mix it with a masher. Put chopped Coriander Leaves, cover it and cook it & serve Crispy Kachori with Sabji, Green Chutney, Sweet Chutney and Curd.
Tip: You can add or skip any ingredient accordingly.
