Get ready for the most delicious carrot cake of your life!
Save this recipe cause you'll want to make this one over and over again!
Ingredients:
-1 Cup Milk
-2/3 Cup Light Brown Sugar
-2/3 Cup Granulated Sugar
-180ml Oil
-2 tsps Vanilla Extract
-300g All purpose flour
-1 1/2 tsps baking soda
-1 1/2 tsps baking powder
-1 tsps cinnamon
-1/4 tsps salt
-300g carrots finely chopped
-70g walnuts finely chopped
-12oz Cream Cheese
-1 Cup Butter
-3 Cups Powdered Sugar
-2 tsps Cinnamon
Preheat Oven to 350 degrees F. Grease your baking dish and line with parchment paper. In a bowl combine milk, oil, vanilla extract, and both sugars. Mix well till sugar dissolves.
In a separate bowl, combine all the dry ingredients. combine dry ingredients into wet ingredients. Add carrots and walnuts, fold in. Pour into dish and bake for 40-45 minutes, until firm to the touch. Cool completely before adding frosting.
For the frosting, Whip butter in a bowl until light and fluffy. Add powdered sugar a little at a time and mix until well combined. Add cream cheese and whip everything until smooth.
Thats it! you're left with the most delicious cake for the spring.
We also baked some cupcakes, sliced the tops to make carrot cake sandwiches. They were incredible!
