Welcome back to Cook with Gayathri Raj! Today, I’m excited to share a delightful lemon pudding recipe with you. This dessert has three delicious layers, and it’s incredibly easy to make. Follow along and enjoy this refreshing treat!

Ingredients:

First Layer:
- 5 tablespoons melted butter
- 100 grams digestive biscuits (crushed)

Second Layer:
- 450 ml milk
- 85 grams sugar
- 4 tablespoons cornflour
- 1/2 teaspoon lemon essence
- 1-2 drops lemon yellow food color
- 60 grams butter

Third Layer:
- 130 grams water
- 45 grams sugar
- 3 tablespoons lemon juice
- 1-2 drops lemon yellow food color
- 2 tablespoons cornflour

Instructions:

1. First Layer:
  - Mix the melted butter and crushed digestive biscuits together.
  - Line a bowl with butter paper and press the biscuit mixture into the base.
  - Refrigerate for one hour.

2. Second Layer:
  - In a pot, heat the milk, sugar, cornflour, lemon essence, and food color.
  - Stir continuously until the mixture thickens, then add the butter and mix well.
  - Let it cool down, then pour it over the biscuit layer.
  - Refrigerate for 30 minutes.

3. Third Layer:
  - In a saucepan, mix water, sugar, lemon juice, food color, and cornflour.
  - Cook until the mixture becomes thick and creamy.
  - Pour this over the second layer and refrigerate for three hours.

Your delicious lemon pudding is ready to serve! This dessert can be stored in the fridge for up to three days.
