I’ve never realized that my love and understanding for chicken is superficial until I eat a piece of Galangal Chicken. Chicken is the most delicious only when it’s properly cooked and seasoned to highlight its original flavor. Speaking of Galangal Chicken, even the part that is the most likely to become dry after cooked is so tender. And the sauce, a combination of scallion, ginger and galangal, offers a special aroma with a hint of pungency. The dish is too good to resist.
