Today, we're eating some honeycomb pasta, Pastitsio-style! Pastitsio or Pastichio is Greek lasagna, and it is AMAZING. So, I tried the bolognese + béchamel masterpiece in a honeycomb pasta style. So, so good.

To turn it into honeycomb pasta, just grease a 9 inch springform pan, then start by layering some bolognese on the bottom, then add your rigatoni (or in my case, paccheri) that you've undercooked by 2-3 minutes so they're all standing up and snug. Then fill the noodles half with bolognese and the rest of the way with béchamel, using the remainder of the béchamel to completely cover the top of the noodles. Bake at 380 for 30 minutes, then broil on middle/lower shelf till golden brown. Once it's done, remove the outside of the springform pan and serve! So fun. So good.

Note: I made about 1/2 - 2/3 the recipe for the bolognese, but in hindsight I wish I had made the full recipe. I didn't use all the bolognese, but I had leftover noodles, so it's an easy round two pasta bolognese.
