Crust Ingredients:

2 cups crushed grahams
1 stick butter(melted)
1/3 cup brown sugar
1/2 tsp cinnamon powder(optional)

Taho Cheesecake:

2 1/2 tbsp gelatin, clear and unflavored
5 tbsp very hot water
227g cream cheese, softened at room temperature
3/4 cup white sugar(or less)
330ml soya milk, chilled overnight
370ml all purpose cream, chilled overnight

toppings:
1/2 cup small sago/tapioca pearls
Arnibal:
1 cup water
1 cup brown sugar
1/2 tsp vanilla extract

Procedure:

1) Crust: combine crushed grahams, melted butter, brown sugar and cinnamon powder
2) Press graham mixture into the pan and pack it tightly. Chill until ready to use
3) Cheesecake: dissolve gelatin into the very hot water and set aside
4) Beat cream cheese until smooth
5) Add white sugar and mix well
6) Add soya milk and mix well
7) In a separate bowl whip all purpose cream on high speed until doubled in size
8) Combine whipped cream and soya milk mixture
9) Add dissolved gelatin and mix well
10)Gently pour cheesecake mixture onto the crust
11)Cover and chill overnight
12)Topping: Cook small sago/tapioca pearls over high heat for 15min.
13)Drain water and set aside
14)Arnibal: Combine water and brown sugar
15)Cook over med.low heat until slightly thickened.
16)Add vanilla extract and Cool completely
17)Unmold cheesecake and add toppings
