A simple, elegant and delicious treat, candied orange peels are the perfect dessert garnish. Learn how to make them with our pastry chef in this video.

Ingredients
4 oranges
3 cups sugar
¾ cup water

Directions
1. Peel the orange and cut the peels in ¼ inch strips. Blanch them, beginning with cool water and the orange peels in the pot and then bring them to a boil. Once at a boil, remove and cool in an ice bath, repeat 2 more times.
2. Bring the 3/4 cup water and sugar to a simmer for 7-8 minutes and add the orange peels and simmer on low for about 40-50 minutes until they change color and become translucent. Strain and dredge the peels in granulated sugar and place on a rack to dry overnight.
3. Place some more of the peels on a rack to let dry overnight and dip in dark chocolate. Save the syrup for use in cakes, sauces and drinks
