Is it possible to 100%
Is it possible to 100% complete GTA Online? Yes, but it'll take a significant amount of your time and sanity.
---------------------------------------------------------------------------------------------------------------------------
Here's a list of all of the stuff you need to do in order to get to 100% completion:
-Max out your stats
-Hit level 750
-Buy everything
-Get all awards
-Play all rockstar created jobs
-Get all collectables
-Hit level 1000 in Arena War
-Hit level 1000 in The LS Car meet
-Get all hairstyles
-Get all tattoos
-Get all Office Trophies
-Get all Nightclub Trophies
-Get all Arena War Trophies
-Get all Arcade Trophies
-Complete everything on the Progress Screen
-Get every unlockable clothing item (excluding limited time items)

Disclaimer: Although these calculations were done to the best of my ability, it's very likely that other people who tackle this same question will likely come out with different results. Unfortunately it's very hard, if not impossible to truly ascertain the correct amount of time something like this would take. Different players will play at different speeds, and some people will have a slightly different definition of what 100% means to them.
