This soft and chewy Ang ku kueh is flavoured with aromatic pandan juice and filled with super fragrant coconut palm sugar mung bean paste. The coconut palm sugar mung bean paste filling is made with pandan, coconut milk and Gula Melaka. This is a recipe I got from my mom. Hope you enjoy! 😊
ingredients:
Filling:
~70g Split Mung Bean
~90g Water
~60g Gula Melaka/Palm Sugar
~1/4tsp salt
~75g coconut milk
~80g water
~4pcs Pandan Leaves

Dough
~60g Potato
~110g Hot Pandan water
~150g Glutinous rice flour
~10g Sugar
~12g oil
