Today I will show you how to make cashew cheese at home, it is so creamy and tasty with herbs and garlic. Once you try this plant-based cultured cheese, you would keep dreaming about it.

🧀  Ingredients

Cashew nuts    250g
Rejuvelac          120g
Water                   50g
Garlic cloves      8-10
Vegetable oil
Salt
Fresh herbs


🧀  Methods

1. Soak cashew in water for 3-5 hours.
2. Add soaked cashew and rejuvelac into the food processor, blend until it becomes a thick paste. You might need to pause toe scrape down the sides of the bowl, add water and continue blending.
3. Transfer the cashew paste into a clean airtight container, leave it at room temperature to ferment for 12-24 hours, taste and check if you like the acidity level.
4. Next place the peeled garlic cloves in a small saucepan, add enough oil (I use rapeseed oil) to cover the garlic, cook on the lowest heat on the stove for 20-30 mins, or until garlic is completely soft.
5. Add the cashew paste, 2-3 garlic confit, 1-2 tbsps of garlic oil (the oil used to cook garlic), and salt into the blender, blend until completely smooth. Taste and add more salt or garlic if needed. Finally stir in some chopped fresh herbs, you can use parsley, chive, thyme, basil etc
