My MIL shares her Bharwa Karela Recipe today!
Karela or Bitter Gourd is not liked by many because of its bitterness. But this recipe of stuffed karela has no bitterness at all! This recipe of Stuffed Karela is slightly sweet and slightly tangy. Raw mangoes and a bit of jaggery is added to the filling of Bharwa karela that gives it its sweet tangy taste.
In this recipe of Stuffed karela, the karela is first soaked and then boiled in salt water. The peels and the pulp od karela is removed to make the stuffed karela. These are then boiled with salt water and refreshed in cold water. The emptied karela shells are filled with a stuffing of spices, onion paste, raw mango paste and the boiled karela pulp and peel.
It is then fried in mustard oil.

Recipe :

Stuffed Karela
Preparation Time: 30 minutes
Cooking Time: 30 minutes
Serves: 3-4

Ingredients:
500g karela
2 large onions
2 raw mangoes
2 tbsp fennel seeds
2 tbsp coriander seeds
1 tsp nigella seeds
1 tbsp fenugreek seeds
½ tsp red chili powder
1 tsp turmeric powder
Salt as required
½ cup mustard oil
¼ cup garlic
½ cup jaggery

Method:
Scrape the bitter gourd. Slit into half and scoop out the pulp.
Mix in 4 tbsp salt and set aside for 20 minutes. Boil with 2 cups water for 5-6 minutes. Drain, refresh in cold water and squeeze out all the moisture.
Roughly chop the onions. Peel the mangoes and roughly chop them.
Lightly roast the coriander seeds, fennel seeds and the mustard seeds and grind together with the jaggery, onions, mangoes and garlic. Mix in salt to taste, red chili powder and the turmeric powder. Mix in the squeezed karela pulp and peel. Stuff the prepared stuffing inside the scooped karela and tie with a thread to ensure that the stuffing doesn’t come out while cooking.
Heat the mustard oil in a pan. place the stuffed karela and cook till golden on all sides remove the karela from the oil and add in the remaining stuffing (koor).
Saute till the masala leaves oil. Serve.
