We hope you enjoy this new series where we share with you our favourite lazy vegan meals. Perfect for when you're busy, tired, or just can't be bothered to cook. These meals are a great option instead of ordering takeout or buying a ready meal. They're simple, quick, and delicious!
RECIPES
Baked Tomato Gnocchi With Pesto Drizzle
Serves 4
Ingredients:
For the gnocchi bake
• 1/2 tbsp oil from the sundried tomato jar
• 1 clove of garlic, minced
• 8 sundried tomatoes, roughly chopped
• 1 400g of butter beans, drained
• 1 small bag of cherry tomatoes
• 500g gnocchi
• 1 350g carton of arrabiatta sauce
• 1 tin of tomatoes
• 1 tsp dried oregano
• 1 tsp dried parsley
• big pinch of salt & pepper to taste
• 2 big handfuls of spinach
• vegan cheese, grated
For topping
• vegan pesto
• fresh basil
• chilli flakes
Vegan Fish Finger Burgers
Serves 2
Ingredients:
For the tartare sauce
• 4 tbsp vegan mayo
• 1/2 tbsp capers, roughly chopped
• 2 cornichons, diced
• 1/2 tsp lemon juice
• small handful of parsley, chopped
• pinch of pepper to taste
For the vegan fish finger burger
• 6 vegan fish fingers
• 2 burger buns
• pea shoots or lambs lettuce
• fresh dill
To serve (optional)
• chips (frozen for ultimate laziness)
• peas
