Lucknow Famous Idrees Restaurant Style Chicken Biryani

Lucknowi biryani or Idrees Restaurant Style chicken biryani is a special and traditional method of biryani making from the capital city Lucknow which is often made in shahi style using chicken or mutton. Lucknow is always known for its delicious and amazing shahi delicacies which are always mouth-watering and finger-licking.

Ingredients:
1 kg chicken
1 tsp heaped salt
2 tsp red chilli powder
11/2 tbsp garlic paste
11/2 tbsp ginger paste
2 tbsp fennel
1 tsp black pepper corn
4-5 cloves
1 black cardamom

Milk 21/2 cup ( 650 ml )
1 tsp rose water
1 tsp kewra water
1 pinch saffron
1 tsp sugar
1/2 tsp nutmeg powder
1/2 tsp mace powder
1 tbsp fennel powder
1 tsp cumin powder
1)2 tsp green cardamom powder
food color
11/2 medium fried onion
1/2 cup oil ( 125 ml )

For Rice:
4 cup rice ( 800 g - 1 kg )
2 tbsp oil
2-3 bay leaves
4-5 green cardamom
4- 5 cloves
1 black cardamom
2 cinnamon stick

For layering:
11/2 fried onions
1/2 cup oil ( 125 ml )
food color
kewra water
