Kaju strawberry ingredients
Cashew nuts – 1 cup
Sugar – 1/2 cup + 1/8 cup
Rose food colour – 1/4 tsp
Red food colour – 1/4 tsp
Green food colour – 1/4 tsp
Rose essence – Few drops
Vanilla essence – Few drops
Water as needed

Kaju strawberry recipe method:
Powder the cashew nuts to a fine powder in a mixer. Measure 1 cup of the powdered cashew nut.
In a heavy bottomed pan, prepare sugar syrup first with 1/2 cup sugar and 1/4 cup water in medium flame. Bring to one string consistency. Refer video for one string consistency. If you check a drop of syrup in between your forefinger and thumb, a string will form. Add rose essence, rose and red food colour to this.
Add powdered cashew and keep mixing in medium flame.
At a stage, it will start leaving the sides of the pan. Check if its right consistency by greasing your hands with water and if you roll a small pinch of the cashew mixture, you will be able to roll a non sticky ball.

Switch of the flame and keep mixing to get a thick dough. Transfer to a clean kitchen countertop. When the dough is warm enough to handle, you can use few drops of ghee to grease your hands if needed and knead the dough to make it smooth dough. If it seems dry, add one or two tsp of milk.
Knead to make it smooth and divide the dough to 12 equal sized balls.
Shape it to cones that resemble strawberry. Refer video for better understanding. You can use a fork or toothpick or any tool to press and make it look like a strawberry.
I have used a peeler to give the impressions to resemble the strawberry looks.
Now repeat the same procedure for green dough (measure the cashew powder and use 1/2 the amount sugar and 1/4 the amount water). Add green colour and the essence while preparing the green dough. Divide into 12 small sized balls.
Flatten each into rounds and cut into quarters. Stick each quarter to the strawberry we made to resemble its leaf.
You can also do it in the way I have shown below. Use a clove for decoration as well as flavour. Arrange in paper liners.
Notes
The whole process should be done in medium flame. Otherwise you may lose the right consistency.
Pink and red gives the strawberry colour. I used liquid colour and recommend the same to use.
As soon as you make the dough, you should shape it, without letting the dough dry.
Stays good for 3-4 days in room temperature and about a week if in refrigerator.
