Corn Cooking Process
1. Boil water and throw in the corn once its boiling.
2. Cook for 1hr and reduce to simmer for 1 more hour for a total of 2hrs cooking time.
3. Steam dry the corn on a large drying rack. Spread evenly and let it dry for about 20-30 minutes, mixing it around every 10 minutes. It’s important to do this while its still steaming for a nice even dry. Also use a large slotted spoon to take the corn out of the pot, leaving most of the water inside the pot. If you pour it out then the water below won’t allow your corn to dry evenly and it will be wet on the bottom layer. (side note I always put something below 1 side of my drying racks to raise it up and allow the air to enter the bottom and around and all that.)
4. Once your corn is dry to the touch you can bag it up. I do 3lb bags. Fill up all your bags.
5. Fold and push all the air out and seal the bags.
6. Place into pressure cooker. 6 x 3lb bags fit inside my 23qt. Presto. Check your water level! and adjust as necessary. I never let the water touch the bags just slightly below. I also have 1 ½” bolts in my canner rack(tray at the bottom).
7. Pressure cook for 100 minutes at 15psi most people say 90 minutes but with corn 100 minutes worked better for me. You can do 90 and still have success but I recommend 100. If you’re using feed corn I’d recommend up to 120 minutes.
8. Allow the pressure to go down to zero and you can remove the bags while hot, carefully or using heat proof gloves, place them somewhere to cool down. This is why I seal before cooking so you can just take them out and keep moving on.
9. Now do a happy dance because you now have 3lb sterile corn bags ready to create magic!
