Homemade malai kulfi and Matka kulfi alongwith 5 different flavours- Rose, Mango, Chocolate, Anjeer, Kesar-Pista. Kulfi, known as the tranditional indian ice-cream is loved by people of all age groups. Summers are incomplete without homemade Ice-creams and Kulfi. Here is a simple and easy way to make mawa kulfi and create different flavours using the same kulfi mix. Make assorted kulfis or just make a batch of your favourite flavour. I am sure you will fall in love with this. Try these super delicious and indulgent flavourful kulfis and you just won't stop at one.

Ingredients:
1. Milk- 2 cups (500ml)
2. Sugar- 3/4 cup (around 200 gms)
3. Fresh cream/Malai- 1 cup (250 gm)
4. Khoya/Mawa- 1/2 cup (125 gm)
5. Cornflour- 2 tbsp (30 gm)

Directions:
1. Mix cornflour with 2 tbsp milk and keep aside (cornflour slurry).
2. Take milk in a pan and keep it for boiling. Keep the burner on slow to medium flame all the time and NOT on high flame at any given time.
3. Once milk becomes hot, add sugar and stir till sugar dissolves.
4. When milk starts boiling, add Mawa(Khoya) to it and stir till it dissolves in the milk.
5. After sometime, milk starts boiling again and now add the cornflour slurry. Stir for 3-4 minutes or till the mixture becomes bit thick.
6. Turn off the gas and add malai or fresh cream and combine well. Allow this mixture to cool down to room temperature. Kulfi mix is ready.
7. Once the mixture comes at room temperature, you can notice that the mixture becomes more thick and dense. This is Our plain "Mawa Kulfi or "Malai kulfi" flavour. Now you can add the flavours to this mix or simply fill this mixture in moulds or matka and freeze it for 6 hours.
8. To set kulfi in matka, add the mix to the matka and cover it with aluminium foil. secure it tight with rubber band. set in freezer for 6 hours.

For different Kulfi Flavours:-
1. Mawa/Malai Kulfi- add crushed/chopped dryfuits to the kulfi mix and freeze.
2. Rose Kulfi- Add Rose syrup and dried rose petals. Dried rose petals is optional but if you can add it, it takes the kulfi to the next level.
3. Kesar-Pista Kulfi- Soak kesar strands in milk for sometime and add this to the kulfi base.
4. Chocolate Kulfi- Add cocoa powder and chocochips to the kulfi mix.
5. Mango Kulfi- add finely chopped mangoes or mango pulp to the kulfi mix.
6. Anjeer kulfi- Add crushed/chopped anjeer to the kulfi mix.
