RECIPES:

BEEF SOUP RECIPE
Ingredients
- 2 lbs Beef shank or beef brisket
- 2 onion
- 1 tsp salt
- 1 tbsp of peppercorn
- Cabbage
- 4  medium size pieces of carrots ( You can also add potatoes )
- Spinach
- 1 tbsp fish sauce
- 1 cube beef bouillon
Put beef in a big pot, add enough water to cover it and bring to boil in high heat.
Skim off skum
Add onion, salt and peppercorn
Cover and simmer for 2-3 hours till meat is tender
Add more water if needed
Increase heat to medium high
Add carrots and cook for 10 minutes
Add fish sauce
Add beef bouillon cubes
Add cabbage and spinach
Taste and season with salt
Serve with rice. Enjoy!

SOFT BRIOCHE RECIPE
- 2 tsp dry yeast
- 273 ml milk
- 830 ml Flour
- 1 egg
- 3 tbsp sugar
- 1 tsp salt
- 3 tbsp soften unsalted butter
To golden: 1 egg

Put dry yeast and add a tbsp of warm water to the stand mixer.
Leave it to rest for 10 mins at room temperature
Add milk, flour, egg, sugar and salt to the mixer
Knead for 10 minutes
Add soften butter and knead for 10 mins
Cover with table cloth and leave to rest for 2 hours at room temperature
Remove cloth and cover with plastic and refregerate for 12 hours

The next day
Apply pressure and take out the air
Split the dough into 6 pcs  ( 120 grams each )
Put in creased bread pan
Allow to proof again for 2 hours in a warm place
Preheat the oven to 160° C ( 320° F )
Brush with egg and bake for 25 minutes
Enjoy!


CREAMY GNOCCHI WITH SPINACH AND BACON

- 500g uncooked potato gnocchi
- 2 tbsp butter
- 1 small garlic
- 1/2 cup chicken broth
- 1 cup of heavy cream
- Dried parsley
- Salt and pepper to taste
- Spinach
- Bacon
- Parmesan cheese
- Fresh parsley

Cook gnocchi in a large pot of water for 2 minutes or until they begin to float in the surface
Cook bacon and set aside
Add butter and saute garlic
Add the chicken broth and heavy cream
Add dried parsley, salt and pepper
Add cooked gnocchi
Add the bacon and spinach
Stir to combine
Add a splash of lemon at the end
Sprinkle with fresh parsley and parmesan cheese
