INGREDIENTS
■TAMAGOYAKI
2 eggs
30ml dashi broth
1 teaspoon low sodium soy sauce
1/2 teaspoon potato starch
2 crab sticks
vegetable oil, as needed

■SAUCE
120ml dashi broth
2 teaspoons sugar
1 teaspoon low sodium soy sauce
1/2 tablespoon vinegar
1/2 tablespoon potato starch
2 tablespoons water

boiled green peas, for garnish

PREPARATION
1. Make the tamagoyaki: Beat the eggs, then add the rest of the ingredients and mix well. Strain the mixture.

2.  Heat tamagoyaki pan on low heat and spread a thin layer of vegetable oil with a paper towel. Pour 1/3 of the egg mixture and lay 2 crab sticks near the far edge of the pan. When the egg is set, roll the egg with the crab sticks.

3. spread oil onto the pan and pour 1/3 of the egg mixture. Lift up the cooked egg roll and let the mixture flow under it. Once the egg is partially set, roll. Repeat with the remaining egg mixture.  

4.Make the sauce: Put all of the ingredients except for water and potato starch into a saucepan. Bring to a boil on medium heat.

5. Mix together potato starch and water to make a slurry. Turn off the heat and add slurry to the saucepan. Turn the heat back on and stir until the mixture thickens.

6. Cut the tamagoyaki and arrange onto a plate. Pour over the sauce and garnish with boiled green peas.

7. Enjoy!
