I will tell you how to bake this meringue roll with pistachios correctly.
We put proteins and sugar in the mixer bowl, if you have a powerful mixer, then no lemon juice, salt, protein temperature and other things are not important here, your machine will do everything for you! Beat until stiff peaks, not even a whipped meringue is suitable for a roll.

Add chopped pistachios to the proteins, mix with a spatula. For convenience, transfer to a pastry bag.
Next, I bake on an inverted baking sheet, because the air circulates evenly during convection, that is, the walls of the baking sheet do not interfere. I leave free places around the perimeter, as the roll increases in volume.

Bake for approximately 40 minutes, plus or minus 10 minutes, check for crust. In convection mode 140 degrees, if there is no convection, then up and down. We immediately transfer the finished cake to a kitchen napkin, otherwise it will stick to the parchment, let it cool.

Pour the chilled cream into a bowl, add the powdered sugar and beat. Buttercream is ready. We distribute the cream, sprinkle pistachios on top, add berries: I have strawberries and bananas.

And carefully roll it up. The roll melts quickly, the dessert is very tender, so it is better to roll it up before serving. Decorate the roll as you wish.
