Healthy Vegetable Salad Recipe

Hi Guys, today I’ll show you how to make a Healthy Vegetable Salad. We’ll need one medium yellow onion, half of a red bell pepper, half of a green bell pepper, medium carrot, half a head of green cabbage and flat parsley leaves. For the dressing, we’ll need apple cider vinegar, mustard, a clove of garlic, oil, salt and some chili flakes. First slice the onion thinly, put that into a big bowl. Cut the stem off the cabbage and cut the cabbage in  half. Slice it very thinly. The last piece is hard to slice thin so just chop it into small pieces. Next, we’ll work on the green pepper. Remove the core and seeds. Also remove the white pith. Sice into thin long pieces. Do the same with the red pepper. Take the parsley leaves off the stem. We want just the leaves. Chop that up, this is about ½ cup. Now let’s peel the carrot. This y peeler makes it very quick to peel anything. Cut off one end, leave the other end so we have something to hold onto. Grate the carrot on a box grater. Now let’s make the dressing. Chop the garlic clove finely and use your knife to press the garlic almost into a paste. You can also use a microplane to grate the garlic. Put the garlic into a measuring cup. Pour in ¼ cup of vegetable oil or olive oil, ½ tsp salt, ½ tsp red chili flakes, 2 tbsps ac vinegar, 1 tblsp mustard and mix really well. It’s a smooth creamy healthy dressing. Pour the dressing on top of the vegetables. Mix this very well. This salad tastes best if you let it rest for about 30 minutes. Taste it and add more salt if you like. The vegetables stay crunchy. As you can see it’s a beautiful colorful and very healthy salad.
