Ingredients:
Dough--
All Purpose Flour 500 g
Salt 1 Tsp
Ghee 1.5 Tbsp
Water 1 Cup

Filling--
Chicken Boneless 500g (Boiled and Shredded)
Ghee/Oil 1.5 Tbsp
Onion  2 medium
Garlic 1/2 Tbsp
Green Chili Paste 2 Tbsp
Green Chili Chopped 1Tbs
Black Pepper Crushed 1/2 Tbsp
Salt 1+1/2 Tsp
China Salt 1/2tbs (optional)
Cumin Crushed 1/4 Tbsp

Layering Paste--
Corn Flour 3 Tbsp
Ghee Oil 2 Tbsp
Baking Powder 1/2 Tbsp

Instructions:

1. Prepare the Dough:

• In a large bowl, combine all-purpose flour, salt, and ghee.
• Gradually add water while kneading to form a smooth, elastic dough.
• Cover the dough and let it rest for 30 minutes.

2. Make the Filling:

• In a pan, heat ghee/oil and sauté chopped onions until golden brown.
• Add minced garlic, green chili paste, chopped green chili, crushed black pepper, salt, China salt (if using), and crushed cumin. Mix well.
• Add boiled and shredded chicken to the spice mixture. Cook until the flavors meld and the mixture is dry. Set aside to cool.

3. Prepare the Layering Paste:

• In a small bowl, mix corn flour, ghee/oil, and baking powder to create a smooth paste. Set aside.

4. Assemble the Kachoris:

• Divide the rested dough into small balls.
• Roll each ball into a small disc and place a portion of the chicken filling in the center.
• Seal the edges to form a stuffed ball.

5. Layering:

• Roll out each stuffed ball into a flat disc.
• Spread a thin layer of the prepared corn flour paste on one side of the disc.
• Fold the disc in half and press the edges to seal.

6. Deep Frying:

• Heat oil for deep frying in a pan.
• Fry the kachoris until golden brown and crispy.
• Remove and place on a paper towel to drain excess oil.

7. Serve and Enjoy:

• Your Chicken Kachori are ready to be served! Enjoy them hot with your favorite chutney or sauce.
