Today we're talking about how to cover a fruit cake with fondant icing.

First we'll prepare the cake. The preparation is so important... remember the blemishes, holes and unevenness aren't going to magically disappear when you put the fondant on. We need to get the cake level and flat before we start.
Then we'll put on the almond or marzipan icing, and then go ahead and put on the fondant icing.
To finish it off I'll decorating it with a quick and easy Christmas themed design.

===== RECIPE =====

= Fruit Mix =
- 675g (24oz) mixed fruit, peel and cherries. You can either use a fruitcake mix or make it up with raisins/sultanas/other dried fruit of your choice
- 180g (6oz) dried dates
- 1 cup (250g) apple juice (or orange juice) or (1/3 brandy and 2/3 juice)

Mix together and leave overnight to soak, or microwave for 1 minute 30 seconds and leave for about an hour to soak.

= Cake Mix =
- 115g (4oz) butter
- 1 1/2 cup brown sugar
- 1/2 cup oil
- 3 Tablespoons golden syrup
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon mixed spice
- 1/2 teaspoon baking powder
- 3 eggs
- 1 2/3 cup flour
- 3/4 cup nuts of choice (I used walnuts)

Method:
- Beat butter and sugar together until it is smooth, creamy and pale
- Add the oil and golden syrup and beat to combine
- Add the salt, cinnamon, ground ginger, mixed spice and baking powder and beat to combine
- Add one egg at a time and beat until just incorporated
- Stir in the flour
- Stir in the nuts
- Stir in the mixed fruit and remaining liquid from soaking
- Pour into 8 or 9" round, lined cake tin.
- Cover with tin foil and fan bake at 140 degrees (285 degrees Fahrenheit) for 3 hours 15 minutes
- Uncover and bake for another 45 minutes.
- Leave in the tin for approximately 20 minutes and then tip out onto a wire rack.
