Fredericksburg is home to Eaker Barbecue – a wild barbecue joint offering traditional Texas barbecue with a Korean twist that started as a food truck in Houston. Owners Boo and Lance Eaker took a chance on opening a restaurant at the beginning of 2020 – only months before the covid-19 pandemic stalled the global economy.
