Simple and easy to prepare Vazhuthananga Fry || Brinjal Fry || വഴുതനങ്ങ പൊരിച്ചത്. This ia a tasty side dish for rice or chapathi.

Ingredients:
Brinjal - Circle pieces - 2 long ones or 4 small ones
red chilli powder - 2 1/2 tsp
turmeric powder - 1/2 tsp
rice powder - 1 1/2 tsp
salt - 3/4 tsp
asoefaetoda - 1/4tsp
curry leaves - 2 stem
oil - 2 Tbsp for marination
water - 3 to 4 Tbsp for batter
oil - 3/4 cup for frying
Combine all the marination ingredients.
Fry in heated oil for total of 14 - 15 min.
Turn inbetween.
TEMPERATURE: cooking time may vary depending on the stove type used. Ex. for induction or gas stove cooking time may be lower.
