I met up with Neil Conway, Head Brewer in Waterford Distillery and the main man responsible behind these two whiskeys, for a deep dive into how this came about, the peated whiskey scene in Ireland, its history, and the enormous challenges Waterford Distillery faced in bringing forth these new whiskeys.
