Today's recipe is a special one - Mumbai's iconic Pav Bhaji!  This recipe is straight from the streets of Juhu Beach, known for its delicious and authentic flavours. (Yes, I went there and learnt their exact recipe!). The recipe does not include carrots or beetroot. Want to know why? Keep watching the video.

Ingredients:

Oil
Butter
Cumin seeds
Onion (finely chopped)
Ginger-garlic paste
Green chilies (finely chopped)
Green capsicum (finely chopped)
Kashmiri red chilli powder
Kashmiri red chilli paste
Bhuna jeera powder
Coriander seed powder
Tomatoes (5, chopped)
Cauliflower (florets)
Peas
Potatoes (boiled and mashed)
Pav Bhaji Masala
Water
Salt
Coriander (chopped)
Ladi Pav (or bread)
Red chilli powder

Instructions:

1. Heat oil and butter in a pan. Add cumin seeds and let them splutter.
2. Add onions and cook until translucent (sweating).
3. Add ginger-garlic paste and green chillies. Cook for 1-2 minutes.
4. Add green capsicum and cook for another minute.
5. Add Kashmiri red chilli powder, Kashmiri red chilli paste, bhuna jeera powder, and coriander seed powder. Cook for a minute.
6. Add tomatoes and cook until softened.
7. Add cauliflower, peas, and mashed potatoes. Mix well.
8. Add Pav Bhaji Masala and cook for a few minutes.
9. Add water to adjust consistency and salt to taste. Mash a bit to combine the vegetables.
10. Toast the pav in a pan with butter, Pav Bhaji masala, red chilli powder, and coriander.
11. Serve Pav Bhaji hot with chopped coriander, butter, and lemon wedges.
