This Smoked Cauliflower Mac and Cheese with Roasted Poblano Peppers and Onions is keto friendly, low carb and super delicious. Thank you for watching!!! Please Like, Share, and Subscribe.
Ingredients
48 oz Cauliflower florets
2 poblano pepper
1 medium onion
16 oz cream cheese
2 cups sour cream
8 oz butter
1 tbs kosher salt
1 tbs black pepper
1.5 tbs onion powder
1.5 tbs garlic powder
1 tbs dry powdered mustard
1 cup of almond milk
2 cups mozzarella cheese
2 cups cheddar cheese
Directions
Take your cauliflower and cook in the microwave until fork tender all 4 bags took me 13 minutes. Take your poblano pepper and onion and place on a baking tray spray with olive oil and put under the broiler on high for 10 mins flipping halfway to char the veggies remove from the oven and sit to the side. Take all the cauliflower and add to a large bowl. Add in your soften cream cheese, sour cream, melted butter, salt, pepper, onion powder, garlic powder, dry mustard almond milk and cheeses and mix and combine well. Once mixed add to a sprayed baking dish smooth out and top with additional cheese. Place on your grill at 350 for an hour covered with foil. remove from the oven and place under the broiler on high until top browns. Move the mac and cheese around under the broiler so the top doesn't burn in one spot.
