🧁Ingredients:
1 cup (120g) oat flour
1/4 cup (30g) vital wheat gluten
1 scoop (32g) Livbody Vegan Protein

2 tablespoons (14g) flaxseed meal
1 tablespoon baking stevia or sweetener of choice
1/2 tablespoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1 cup (8oz) unsweetened almond milk
1/2 cup (4oz) unsweetened applesauce
1/4 cup (40g) wild frozen blueberries
Topping: 1 tablespoon (15g) almond butter swirl for each muffin.

🧁Instructions:
1.Preheat the oven to 350°F.
2.Line a jumbo muffin pan with jumbo muffin liners, and set aside.
3.In a large bowl, add oat flour, vital wheat gluten, protein powder, flaxseed meal, stevia, baking powder, baking soda, and salt.  Mix until well combined.
4.Add almond milk and apple sauce to the dry mix and stir until you have a batter.  Don't over-mix.
5.Fold in the frozen blueberries.
6.Transfer the mixture to the lined jumbo muffin pan.
7.Bake at 350°F for 35 minutes.
8.Let the muffins cool, drizzle some maple butter or jam on top, and enjoy.
