Grilled Flank Steak with Parsley-Horseradish Vinaigrette

This is much more than your average grilled steak. It’s a juicy flank steak recipe made even better by a spicy parsley and horseradish vinaigrette sauce that’s liberally slathered on top.

Flank steak is a lean cut that’s best grilled on high heat. Remember to bring it room temperature before grilling so it cooks evenly. It’s also commonly marinated, but here we opt for a chimichurri-like vinaigrette that offers a creamy counter to the rich beef flavor.

Depending on the level of doneness you like, steak cooking time and temperatures may vary.

Follow this rough guide, but practice until you find your perfect level.

Steak Grilling Times:

Rare: 3 to 5 minutes per side
Medium-rare: 4 to 5 minutes per side
Medium: 4 to 6 minutes per side
Medium-well: 5 to 7 minutes per side
Well done: 10 to 12 minutes per side

Steak Grilling Temps:

Rare: 125°F
Medium-Rare: 135°F
Medium: 145°F
Medium-Well: 150°F
Well Done: 160°F
