Chef Lee Yeon-bok's imitation of Menbosha / How to peel shrimp easily
Hello, this is Big Egg TV. I went to Sorae Port in October for the shrimp season.
Wow~ The shrimp is strong and the big one looks so delicious. I packed them up and brought them home.
I'm going to make a manbosha today.
You know that Menbosha is a Chinese dish with minced shrimp between breads, right?
With this fresh shrimp, I'm going to make Chef Lee Yeon-bok's famous Menbosha.
I'll make some crispy shrimp.

** Ingredients **
Menbosha: 20 shrimps, cooking oil, pancake powder, flour, egg white, starch powder, butter, frozen bread, (source: minced garlic, ketchup, sugar, vinegar, oyster sauce)
10 shrimps, cooking oil, pancake powder, flour, ice water (carbonated water, beer), sweet potatoes
(Fried sauce: soy sauce 2, water 2, lemon juice1, Mirim1, and a little oligosaccharide)
** Recipe **
1. Wash 20 raw shrimps in running water, peel them, and remove intestines.
2. Drain shrimp and season with 1/2t of pepper and cooking wine.
3. After mince raw shrimp, add 0.5 egg whites, 1.5 tons of starch, and mix with melted butter or olive oil.
4. Cut the crust of frozen bread and cut it into quarters.
5. Put minced shrimp in the bread and bake mianbao xia in a pan under 60 degrees.
6. Sauce: 3t of ketchup, 1t of sugar, 1t of vinegar, 1/3t of oyster sauce, 1t of minced garlic, 1/2t of minced onion
7. Wash 10 raw shrimps in running water and remove the rest of the head, water gun, skin, and intestines.
8. Cut out the abdomen and press down the back joint to unfold.
9. Stir pancake powder and ice water 1:1 to prevent gluten from forming.
10. Put flour on shrimp and shrimp heads and fry in 170-180 degrees cooking oil.
11. If you have sweet potatoes or other vegetables, fry them.
