MEDITERRANEAN WHOLE CHICKEN - Slow Cooker Recipe + Meals!

Today I'm sharing how to cook a whole chicken in the slow cooker and use the leftovers for more delicious meals! You can cook a whole chicken and have a week's worth of meals if you want! This whole chicken recipe for the crockpot or slow cooker is SO easy and takes minutes to prepare. I hope you enjoy the recipes!

Mediterranean Whole Chicken in the Slow Cooker Recipe
- 1/2 white onion, sliced
- 5 sprigs fresh thyme, stemmed and chopped
- 1 lemon, zested
- 1 tsp salt
- 1/2 tsp pepper
- 3 - 4 lb chicken (thawed if previously frozen) with giblets removed

In the bowl of a slow cooker, add the white onion, set aside. Prepare the rub for the chicken by adding the thyme, lemon zest, salt and pepper to a small bowl. Pat the chicken dry on all sides. With chicken breast side up, rub half the salt mixture all over the skin of the chicken. Place the chicken breast side down in the slow cooker on top of the onions. Rub the remaining salt mixture onto the back of the chicken. Place the lid on the slow cooker and cook on high for 4-5 hours. Ensure chicken is cooked to 165 degrees F. Meat should fall off the bone and juices should run clear. Enjoy the chicken and save the bones for stock!

Salsa Chicken Skillet Recipe
- 1 tbsp ghee or avocado oil
- 1 yellow bell pepper, sliced thin
- 1 red bell pepper, sliced thin
- 1/2 red onion, peeled and sliced thin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp oregano
- 2-3 cups shredded or diced cooked chicken breast
- 1 cup salsa
- 2 cups baby spinach
- optional additions: 1 can black beans, rinsed and drained, juice from 1/2 a lime

Heat a large skillet over medium high heat. Add the ghee, bell peppers, onion, salt, pepper, and oregano. Stir to coat. Cook for 7-9 minutes or until onions are translucent and peppers are tender. Add the chicken and salsa, stir. Allow chicken to warm through and cook for 3 minutes. Add the baby spinach, cook another 3 minutes or until spinach is wilted. Turn off the heat and stir in optional additions (black beans, lime juice). Serve over brown rice, white rice, cauliflower rice, or greens. Enjoy!

Chicken Broth in the Slow Cooker Recipe
- 1 chicken carcass
- 1/2 white onion, sliced
- 1 carrot, chopped
- 2 celery ribs, chopped
- 2 sprigs fresh thyme
- 1 sprig fresh parsley
- 1 bay leaf
- 1 tsp salt (or to taste)
- 1/2 tsp pepper
- 1 tbsp apple cider vinegar
- filtered water

Add all ingredients to slow cooker (fill water almost to the top leaving about 1/2 inch). Cover and cook on low for 8-12 hours or up to 24 hours for bone broth! After done cooking, strain the broth through a fine sieve to remove herbs, bones. Refrigerate or freeze for future use.
