Saatu or saat is a special sweet famous in coastal Karnataka, especially in the Udupi Mangalore region......I can say, saat is another version of badusha, where the inventor cooked sugar syrup slightly more and name it as saat...
yes u heard it right, the only difference between saat and badusha is the consistency of sugar syrup... In badusha sugar syrup is thin, so that it gets absorbed into the badusha.... but in saat sugar syrup is made intentionally thick so that it forms one thick layer outside....

kindly read the following points before trying the above recipe...
****make sure to use hot ghee, it makes saat crisp ....
****make sure to fry the saat in low heat only throughout... it takes around
      14-16 minutes to fry one batch of saatu.... keep stirring it in between...
       cool the saat after frying....
****sugar used here is almost equal to maida quantity, that would be
      perfect... in my case little syrup was left, that i reused in other recipes...
****make sure to have one long string consistency or syrup color turns slightly white....otherwise, the sugar layer won't be thick and saat will be half badusha...
