Brinjal Masala Curry

Coconut – 4 tbl spoon
Cinnamon stick
Cloves – 3
Cardamom – 1
Cashews – 10
Poppy seeds (kasakasa) – 1 teaspoon
Fennel seeds – ½ teaspoon
Cumin seeds – ½ teaspoon
Pepper – ½ teaspoon
Chilli powder – 1 teaspoon
Coriander powder – 1 teaspoon
Grind to a paste & keep aside
Oil – 2 tbl spoon
Brinjal – 250 grams (slit like this)
Fry till brinjal turns soft & golden brown
Keep aside
Onion – 1
Saute till onion turns light brown
Tomato – 1
Ginger garlic paste – 1 tbl spoon
Saute well
Ground paste
Turmeric powder
Salt
Saute for 3 to 5 mins in medium flame
Tamarind juice of amla size
Add water
Mix well
Allow to boil
Fried brinjal
Cook for 8 to 10 mins in medium flame
Coriander leaves
Mix well & switch off the flame
