材料 :
糯米 250 克
鸡胸肉 300克
腊肠 1条

虾米 10 克
小葱头 1粒
蒜头  1粒
姜片 1小块

鸡肉腌制:
盐 1/3 茶匙
糖 1 茶匙
胡椒粉 适量
蚝油 1 汤匙
生抽 1/2 汤匙
黑酱油 1 茶匙
麻油 1/2 汤匙
绍兴酒 1 汤匙

炒糯米酱料:猪油 1 汤匙 或 葱油 1汤匙
盐 1/3 茶匙
糖 1 茶匙
胡椒粉 适量
五香粉 1/2 茶匙
蚝油 2 汤匙
生抽 1 汤匙
黑酱油 1 汤匙

最后加 250 克 清水

Ingredients (Diana Aw)
1. glutinous rice 250g soak in water for 2hours. Drain and set aside
2. chicken breast 300g cut smaller pieces and marinate it
3. chinese sausage 1piece cut thin slices
4. dried shrimps 10g cut minced
5. shallot 1 clove cut minced
6. garlic  1 clove cut minced
7. ginger 1 small piece cut slices
8. 250g water
9. Aluminium foil bowl with cover 6 pieces

marinate chicken:
1. salt 1/3 tsp
2. sugar 1 tsp
3. pepper approx. amount
4. oyster sauce 1 tbsp
5. light soya sauce 1/2 tbsp
6. dark soya sauce 1 tsp
7. sesame oil 1/2 tbsp
8. shao xing wine 1 tbsp

Stir-fry glutinous rice sauce:
1. Pork lard 1tbsp or scallion oil 1tbsp
2. salt 1/3tsp
3. sugar 1tsp
4. pepper approx. amount
5. five spice powder 1/2tsp
6. oyster sauce 2tbsp
7. light soya sauce 1tbsp
8. dark soya sauce 1tbsp

Method
1. Heat wok with pork lard or scallion oil and add in dried shrimp and fry till fragrant
2. Add in garlic and shallots and stir till fragrant
3. Add in glutinous rice and stir till fragrant
4. Add in glutinous rice sauce and mix well
5. Add in water and stir. May add more dark soya sauce if colour too light. Once boil, transfer to a container and steam for 30min
6. Add in Chinese sausage in the wok and fry till fragrant. Set aside
7. Add in ginger slices in the wok and fry till fragrant, then add in chicken breast and stir till fragrant. Add little water and simmer for a while. Once sauce is thicken, set aside
8. Arrange the chicken in the aluminium foil bowl, follow by sausage and chicken sauce. Lastly add the glutinous rice and press down. Cover it and steam for 25min
9. Serve and enjoy! 💕
