Hello you!
Today I'm making my Fattet Batenjan, a Palestinian layered dish with roasted eggplant, garlicky yogurt and toasted pita. It's delicious as a complement to other plates, or eaten by itself, hot or cold. My family often makes this for large gatherings and it has been a hit with my American friends.
It is so simple to make and so delicious. Many of our dishes are made from humble ingredients that come together to make something fantastic.

Ingredients:
1 large eggplant (depends on your baking dish size)
EVOO, Salt
~1.5-2 cups plain yogurt
Juice of 1/2 lemon
3-4 cloves of garlic
garlic powder (optional)
2-3 whole wheat pitas / pita chips
small bunch of fresh parsely (optional)
