This lemon cake is soft, light and fluffy while being so moist! It has a nice balance of tanginess and sweetness from the lemon curd and mascarpone cream filling, and it's just absolutely delicious!

LEMON GENOISE
3 layers 6 inch cake (4inch deep 6inch diameter pan)
4 large eggs
140g caster sugar
140g cake flour
15g unsalted butter
30g whole milk
1/2tbsp lemon zest

LEMON SWISS MERINGUE BUTTER CREAM

3 large egg whites
175g caster sugar
250g unsalted butter
1tsp vanilla
1tsp salt
1tbsp lemon juice

LEMON CURD

60g egg yolks
60g caster sugar
60ml lemon juice
10g lemon zest
30 unsalted butter, diced

LEMON SYRUP
50g caster sugar
50ml water
1tsp lemon juice

MASCARPONE CREAM
60g mascarpone
60g icing sugar
170ml double cream
