I'll cover the 3 things you must do in order to stop your cupcakes doming:

1) The temperature of the batter
2) Overfilling them (and how to stop doing this)
3) The temperature of the oven

Don't forget to not open the oven while the batter is baking in the early stages (first 12 minutes) this will ensure they do not sink.

It's also wise to pre-heat the oven before you put the cupcakes in.

Also if you add baking powder or bicarbonate of soda in excess this  will result in domes. Ensure your hand is light when adding this.

This method will result in cupcakes that are lovely and flat which makes piping a lot easier.
