CHIA BREAKFAST PUDDING & HOMEMADE GRANOLA
Makes 3-4 puddings depending on size, and 3 cups of granola

INGREDIENTS:
2 ½ cups (595ml) of almond milk
1 cup (240ml) of plain Greek Yogurt (or Coconut Yogurt)
3 tsp (15ml) vanilla extract
pinch of salt
¾ cup (180ml) chia seeds

FOR GRANOLA:
2 egg whites
2 tsp (10 ml) honey
2 tsp (10ml) brown sugar
1 tsp (5ml) cinnamon
¼ tsp (1.25ml) ground cloves
½ tsp (2.5ml) orange zest (from a navel orange. Reserve orange for segments as garnish)
2 cups (180g) old fashioned oats
1/3 cup (50g) chopped pecans
1/3 cup (50g) unsalted cashews
1/3 cup (50g) dried cranberries
1/3 cup (80ml) unsweetened coconut

GARNISH:
Orange segments

METHOD:
In a 4-cup (950ml) pitcher measure out 2 ½ cups of Almond Milk, add Greek yogurt, final and salt. Whisk to combine. Add chia seeds, stir to combine.  Pour chia mixture into 3-4 glasses, depending on size, ¾ of the way full. Refrigerate a minimum of 3-4 hours, overnight even better.

For granola: Pre-heat oven to 375F (190C). In a medium-sized bowl whisk together the egg whites, honey, sugar, spices and zest. Stir in the granola, nuts, cranberries and coconut.  Transfer out to a rimmed lined cookie sheet and bake for 12-13 minutes until dry and golden brown.  

Allow to cool completely and then transfer into an airtight container and keep at room temperature.

To create orange segments, slice off each end of a navel orange (the one you zested) stand orange up on one of the flat sides.  Remove the skin of the orange slicing off skin and pith all the way around.  Then the segments will appear.  Working over a bowl, slice in-between each membrane, almost like pages in a book, releasing the segments into the bowl. Place segments in a small airtight container and keep refrigerated until ready to use.

Top each pudding with a handful of granola and a few orange segments.
