Here is an authentic recipe for Italian focaccia. Focaccia with tomatoes is a delicious Italian bread topped with juicy tomatoes. The tomatoes give the focaccia a fruity and refreshing flavor. Together with the crispy dough and aromatic spices, it's a perfect combination of taste and texture.

Focaccia Recipe with Tomatoes

Ingredients:

300 g flour
15-20 cherry tomatoes
50 ml olive oil
20 g fresh yeast
150 ml lukewarm water
1 tsp rosemary
1 tsp oregano
1 tsp thyme
1/2 tsp sage
1/2 tsp fennel seeds
1 tsp sugar
1 tsp salt
1 tsp coarse sea salt

Instructions:

Mix fresh yeast and sugar in a mortar to form a liquid mixture and let it rise in a warm place.
Sift flour into a bowl, mix with dry herbs, salt, water, olive oil, and the risen yeast.
Knead the dough until it becomes non-sticky and elastic, cover it, and let it ferment in a warm place for 45 minutes.
Place the dough on a baking sheet lined with parchment paper, roll it out to a thickness of 2 cm, and let it rest for 15 minutes.
Cut cherry tomatoes in half, press indentations into the dough, and place the tomatoes with the cut side up.
Brush the focaccia with olive oil, sprinkle with sea salt and additional oregano.
Allow the focaccia to rise for 15 minutes before baking; preheat the oven to 180°C (fan).
Bake the tomato bread on the lower rack for 30 minutes.
After baking, place the hot bread on a rack and cover it with a damp kitchen towel for 5 minutes to steam.
