Imagine eliminating dairy, meat, fish, nuts & more from your diet. That is what many people were forced to do if they had a rare, genetic condition called PKU is short for phenylketonuria. The condition is caused by a defect in the gene that helps create the enzyme needed to break down phenylalanine (Phe), an amino acid. Without this enzyme, a dangerous buildup can develop when a person with PKU eats foods that contain aspartame (an artificial sweetener) or protein such as chicken, meat, eggs dairy, nuts, and legumes.
