Hello. Hiyajiru is a local dish of Miyazaki. There are some restaurants in Miyazaki Prefecture where you can eat it. It's very easy to eat and delicious, so I recommend it. As the name suggests, it's rice in cold soup. It's a dish that's easy to eat in the hot summer.

*We use cooking utensils found in Japanese homes and basic seasonings. This is because there are only a limited number of Japanese seasonings available in the world. We also use the global standard g.

[Ingredients]

Rice (barley rice) 200g

Sardines 8g
Sesame seeds 7g
Shiso 1
Myoga 10g
Tofu 25g
Miso 20g
Peanuts 10g
Cucumber 20g
Water 100g

*The rice contains glutinous barley and brown rice for health reasons.
*The seasonings used are additive-free.
Rock sugar is made from beet sugar.

How to make
1. Finely chop the peanuts with a knife.

2. Cut the shiso leaves into 4 equal parts and thinly chop them. Cut 2/3 of them into even finer pieces.

3. Slice the cucumber into round slices.

4. Finely chop the myoga ginger.

5. Finely chop the dried sardines in a frying pan and fry over medium heat.

6. When the sardines have turned brown, add the sesame seeds, and when the sesame seeds have turned brown, turn off the heat.

7. Crush the fried dried sardines and sesame seeds in a mortar.

8. Move them to one side, crush the peanuts, and mix thoroughly.

9. Add the miso and mix until incorporated.

10. Dissolve thoroughly in water.

11. Add the myoga and shiso leaves, and mix while crushing the tofu.

12. Pour over rice, and garnish with shiso leaves to finish.
