This one serves a crowd
This one serves a crowd and is so easy to make up! You can freeze this recipe as well for a later date!
1 pound ground beef
1/2 an onion
Taco seasoning mix
1 large (28 ounce) can of enchilada sauce
corn tortillas (I used just shy of a 30 pack)
1 can corn
1 can re fried beans
1 pound cheese of your choice
Brown beef and onions at the same time, when finished add the taco seasoning just as the package indicates, using water to mix seasonings around.
Layer your Enchilada casserole
Cover with foil and bake in a preheated 375 degree oven for 40-45 mins. Taking the foil off 10 mins before done, adding the remaining cheese and finish baking.
