This is an absolutely double delicious Plum Cake recipe from times gone by. I couldn't tell you how old this recipe is, but I will tell you it's one of my favorite cakes and the flavor is superb! The recipe is below: Preheat oven to 350 ***After you've sifted the dry ingredients into your mixing bowl, *Add EVERYTHING left into your mixing bowl at one time* Sift together 2 cups self rising flour, 2 cups sugar, 1 tsp. ground cloves and 1 tsp. ground cinnamon and place in your mixer. Add 1 cup of vegetable oil, 3 eggs 1 tsp. lemon extract and 1 cup of chopped nuts I used pecans Drain liquid and remove the pitts from one can of Oregon brand plums...puree with 1 tablespoon of flour. Mix well. Add to the cake mixture and stir until blended. Pour into a VERY well greased pan (I would use a solid shortening like Crisco) and bake for 1 hour. Remove from pan IMMEDIATELY after taking out of the oven and let it cool a bit (about 10 minutes.) Make the glaze and pour over the top. Glaze is 1 & 1/2 cups confectionery sugar and 2 to 3 tablespoons lemon juice (fresh or bottled). Let the cake cool & enjoy!
