✓ We were very lucky to be revisiting Sangeetha pure vegetarian restaurant (located in Hounslow West); in this video  Master Chef Prakash reveals some of his recipe secrets into how to make the perfect Set Dosa & Spring Masala Dosa.

Set Dosa Batter Recipe Ingredients:
* Rice flour.
* Urid Dal.
* Tumeric (Haldi).
* Fenugreek (Methi).
* Drizzled with Ghee (Clarified Butter) whilst cooking on the tawa.

Served with:
* Rajma, Vegetable and Coconut Kurma.
* Khar Columbo Curry (contains Tamarind, Coconut, Lentils).
* & White Coconut Chutney.

Spring Dosa Filling Ingredients:
* Red & Green Capsicum.
* Spring Onion.
* Indian Red Onion.
* Freshly chopped Green Coriander.
* Chopped Green Chillies.

* Sprinkled with:
* Indian Gunpowder (Lentil & Chilly powder).
* Black Pepper.
* Black Himalayan Salt (Sanchar).

* & a drizzle of Vegetable Oil.

Mash Potato Masala filling (lightly spiced):
* Onion.
* Potato.
* Carrot.
* Green peas.
* Green coriander.

The Set Dosa is served with three delicious chutneys:

Red Tomato Chutney:
* Onion.
* Tomato.
* Red chilli.

White Coconut Chutney:
* Coconut.
* Roasted chana.
* Green chilli.
* Ginger.

Green Coriander Chutney:
* Green coriander.
* Mint.
* Green chilli.
* Ginger.
* Tumeric Powder (Haldi).

Also served with the Set Dosa is a South Indian Sambar (spicy lentil soup):
* Onion.
* Tomato.
* Tamarind.
* Dal.


If you sit in Sangeetha Vegetarian restaurant you'd be forgiven if you imagined or thought that it is a South Indian "Masala Dosa" "hotel" or stall (or "Lari") somewhere on the busy, bustling streets or beaches of India - astonishingly these guys were making these Indian street food favourites in the heart of "Proper London" - making them freshly cooked to order and serving them piping hot within a matter of minutes.........delicious restaurant quality food; but at affordable street food prices!!!

Dosas are an ubiquitous and very popular food in India. The (eggless) dosa batter is made of fermented Rice, Urad Dal & Fenugreek Seeds), which is then cooked on a hot griddle (in a very similar way to a French Crepe Suzette or Galette or even a Chinese Jian Bing) until it's crispy & then filled with a delicious spicy combination of Mashed Potato, Peas, Carrot & Onion.


...............Chef Prakashmakes it look so very easy, but it takes many years of practice to make perfect Dosas' just like you see here (Chef Prakash has worked for Sangeetha restaurant for over 30 years).
