Pan-Seared Miso Salmon

Ingredients:
400 grams salmon
2 tablespoons Awase miso paste
2 tablespoons mirin
1 tablespoon soy sauce
1 tablespoon cooking sake
1 teaspoon grated ginger
1/2 teaspoon brown sugar

Directions:
1. Add some salt on bothe side of salmon and set aside for 15 minutes.

2. In a mixing bowl, add Awase miso paste, mirin, cooking sake, soysauce, brown sugar, grated ginger and mix well.

3. After 15 minutes, pat dry the salmon to remove the excess liquid.

4. Transfer salmon into a bowl, pour in the miso mixture and marinate in the fridge for 2 hours.

5. After 2 hours, wipe off the excess marinade.

6. Preheat a non-stick skillet over medium low heat, and add about 1 tablespoon cooking oil. Add salmon, pan sear the salmon for 2 minutes over medium low heat.  After 2 minutes, reduce heat to low, cover and sear for 5 minutes.

7. After 5 minutes, open the lid, turn the heat back to medium low, sear for 2 minutes, cover then sear for 5 minutes over low heat.

8. You may garish with chopped onion or dried parsley and serve.

香煎味噌鮭魚

材料:
400克 鮭魚

醃鮭魚材料:
2湯匙 紅白味噌
2湯匙 味醂
1湯匙 日式䤗油
1湯匙 日式料理清酒
1茶匙 薑蓉
半茶匙 黃糖

做法:
1. 在鮭魚兩面撒少許鹽, 放置15分鐘備用.

2. 在碗中加入所有醃鮭魚材料然後攪拌均勻備用.

3. 15分鐘後, 用廚房紙巾將鮭魚印乾多餘水分.

4. 將鮭魚放人碗中, 加入醃鮭魚材料然後放入冰箱兩小時.

5. 兩小時後, 稍稍撥開表面的醃料.

6. 中小火預熱平底鍋然後加一湯匙油, 加入鮭魚然後煎兩分鐘. 兩分鐘後, 調至小火, 蓋上蓋子煎五分鐘.

7. 五分鐘後, 開蓋翻面, 調高至中小火煎兩分鐘, 蓋上蓋子然後調至小火煎五分鐘即可.
