This was one of the rib experiments I tried on Memorial Day weekend and it was a success! Since it was an experiment, I only did one rack, but you could double up the rub and prepare another rack. A 6qt or 8qt would have no issues holding two racks and I’ve even heard the 8qt can hold up to three! If you do double-up, keep the liquid to 1.5 cups in a 6qt, but increase it to 2 cups in an 8qt.

Today’s Ingredients:
3½ lb rack St. Louis style pork ribs, membrane removed
1 packet ranch seasoning mix
2 tsp smoked paprika
1 TB black pepper
1½ cups pickle juice (*use 2 cups if you have an 8qt pot)
Ranch dressing (optional for dipping):
1 packet ranch seasoning mix
1 cup mayo, greek yogurt, or sour cream(mayo in the video)
1 cup milk
Optional, if broiling: 2 TB melted butter
Instructions:
1. In a small bowl, mix a packet of ranch seasoning, smoked paprika, and black pepper to make a rub.
2. Rub the mixture all over the ribs, including both sides and all edges. Wrap the ribs tightly in plastic wrap and refrigerate at least 2 hours, but overnight is preferred.
3. When ready to cook, place a short trivet into an unheated Instant Pot along with the 1½ cups pickle juice. Unwrap the ribs and coil them into the pot. [If you are using an 8qt pot, use 2 cups of pickle juice. If you are doubling the recipe to make 2 racks, keep the liquid the same.]
4. Lock and seal the lid and cook on manual/high 20-25 minutes (depending on how tender you like your ribs) followed by a 10 minute natural pressure release. Release any remaining pressure before reopening the pot.
5. Optional: Mix additional ranch dressing if you plan to serve as a dip.
6. Optional: The ribs are ready to eat now, but if you want to add some color and crispness, place the ribs onto a parchment-lined sheet pan and brush with melted butter. Place under an oven broiler for 5-10 minutes until browned with crisp edges.
7. Serve and ENJOY!
