2 puff pastry rolls (rectangular, 280g)
2/3 lb (300 g) minced beef
2 eggs
3 ½ oz (100 g) stale bread
Milk to taste
2 ¾ oz (80 g) Parmesan cheese
1 ¾ lbs (800 g) eggplants
2/3 cup (150 g) tomato puree
Salt to taste
Extra virgin oil to taste
1/3 lb (150 g) string cheese
Breadcrumbs 1 tbsp
Basil to taste
Sesame seeds to taste
Egg to taste (egg wash)
Sunflower seeds oil to taste

Peel the eggplants, slice them into slices about 1/2 cm thick and arrange them on a dish. Sprinkle them with salt and let them rest at least 30 minutes. Cut the stale bread and soak it in milk, then crumble it with your hands. Collect the beef in a bowl, add grated cheese, two eggs and the soaked and squeezed bread. Amalgamate the mixture with your hands until it is perfectly homogeneous and let it rest. Rinse the eggplant slices and dry them well with absorbent paper. Fry them in sunflower oil until golden brown. Cook the tomato sauce, let it reduce, add salt, oil, and a few basil leaves.
Unroll the puff pastry, sprinkle it with breadcrumbs and distribute the eggplant slices lengthwise, leaving a few inches free on the sides. Spread the beef mixture over the eggplants, sprinkle with tomato sauce, place a layer of eggplants and string cheese in the center. Close the meatloaf with the help of the baking paper and roll it up. Seal the roll at the ends. Unroll a second sheet of puff pastry, make herringbone cuts on the sides. Place the meatloaf in the center with the closure facing down, and make the interlacing by alternating the flaps of dough. Brush with plenty of beaten egg and sprinkle with sesame seeds to taste. Bake the meatloaf at 180° C in a static oven for 45 minutes, let it cool down and serve.
