Serves 4 persons (adults)
INGREDIENTS
1 Kg peeled and deveined prawns
1 tbsp Sichuan peppercorns
5 spring onions
1 cup plain flour
1 tsp cornflour
Vegetable oil
6 garlic cloves, roughly chopped
5 cm piece ginger, peeled and sliced into fine strips
15 dried long red chillies, cut into small pieces
Marinade:
2 tbsp light soy sauce
1 Tbsp fish sauce
2 tsp sesame oil
3 cloves of crushed garlic
Stir-fry sauce:
2 tbsp light soy sauce
2 tbsp Chinese Shaoxing wine or Chicken Stock
1 tsp sugar
2 tsp freshly ground black pepper.
METHOD
- Combine the prawns with the marinade ingredients. Preferably overnight.
- Heat the Sichuan peppercorns in a dry frying pan over medium heat until fragrant. Transfer the peppercorns to a mortar and use a pestle to grind them to a coarse powder and set aside.
- Finely slice the pale part of the spring onions and keep that aside.
- Then cut the remaining green part of the spring onion into batons. Keep the two parts separate.
- In a small bowl, combine the ingredients for the stir-fry sauce, except the pepper.
- Stir well to dissolve the sugar.
- If the prawns were kept in the fridge overnight, bring them to room temperature before cooking,
- Mix the Plain Flour and cornflour.
- Coat the prawns in the flour & cornflour mix, shake off any excess flour.
- Pour enough vegetable oil into a large non-stick frying pan to coat the bottom.
- Heat the frying pan over high heat and then carefully place each prawn into the oil. Cook for about 2-3 minutes each side or until golden brown.
- Drain the fried prawns on a paper towel.
- Use a wok or deep pan to cook the prawns.
- Add 2 tbsp of vegetable oil and bring it to medium heat.
- Now add the chopped garlic and stir fry for 2 minutes.
- As the garlic starts changing colour, add the ginger, the whites of the spring onion, and the cut red chillies.
- Stir fry for about 2 minutes and then add the prawns back in and mix well.
- Now add the ground Sichuan peppercorn, sprinkling all around to coat the prawns.
- Stir & mix well and add the freshly ground black pepper.
- Add the stir-fry sauce and toss until well combined and the prawns are cooked through and there is no liquid in the pan.
- Scatter the green part of the spring onions.
- Remove from heat and serve.
