Hi Friends !! Today The Variety of Flavours is going to share the recipe for Instant Carrot Pickle. In winters , India gets a variety of vegetables in abundance and carrot is one of them. So today we are transforming this healthy vegetable into some delicious pickle which would be ready in just few minutes and finish in no time. This Pickle have a short shelf life but if you will put it in fridge , it will stay fine for 12-15 days. Please look at the ingredients list below :-

- Carrot - 300 Gms or 5 Carrots ( Cut Length wise ). While Choosing carrot, do not choose the too thick ones. After cutting, make sure carrots don't have water . If they have water,  then you can put them in sun for some time.
- Oil 3 Tbsp
- Asafoetida/Hing - 1/4 Tsp
- Salt 3/4 Tsp or As per taste
- Red Chilli Powder or Lal Mirch Powder 1/2 Tsp
- Turmeric or Haldi Powder 1/2 Tsp
- Roasted Fenugreek Powder or Bhuna Methi Dana Powder 1/2
 Tsp
- Roasted Cumin Seeds or Bhuna Jeera Powder 1/2 Tsp
- Fennel Seeds Powder or Saunf Powder 1/2 Tsp
- Mustard Seeds Powder or Rai Powder 4 Tsp
- Lemon Juice 1 Tbsp
