Learn to make Gavran Chicken Rassa easily at home. In this Gavran chicken curry recipe, I made Gavran Chicken Masala first and then the Gavran Chicken Gravy.

No need to add any additional Garam Masala as the Gavran Masala is so flavorful and aromatic that you don't need to add any store brought Garam Masala.

The recipe takes a long time to make the Gavran Masala as we have to roast all the masala until they are golden brown and then let it cool down and grind it.

In the ingredients for Gavran Masala, I had added Black Stone Flower or Dagad Phool that is completely optional as it is not a necessary ingredient in Gavran Chicken but it does give a nice aroma to the masala.

Gavran Chicken is incomplete without Bedgi Mirchi/Bedgi Red Chilli (gives the curry bright red color and adds a little spiciness to the gravy) but if it is not available you can use any other red chili.

I have used broiler chicken here but to make authentic Gavran Chicken use Gavthi or desi chicken or Country chicken.

In this video, I am sharing the Gavran chicken recipe prepared in Maharashtrian Style. This is an easy chicken curry recipe. You can prepare gavran chicken masala easily at home. The recipe is shared below.


Green Masala
• 1-inch ginger (roughly chopped)
• 10-12 garlic cloves
• 2 green chilies (roughly chopped)
• 1/2 cup coriander leaves (tightly packed)

Marinate the chicken
• 500-gram chicken
• 1/4 tsp turmeric powder
• Salt to taste
• Prepared green masala

Gavran Chicken Masala
• 3 tbsp coriander seeds
• 1 tsp cumin
• 4 cloves
• 1-inch cinnamon
• 6 peppercorns
• 1 black cardamom
• 1 small black stone flower
• 2 green cardamoms

Onion-coconut masala
• 2 tsp oil
• 1 onion sliced
• 1/2 cup coconut
• 1 tsp poppy seeds (optional)

For Gavran Chicken Curry
• 2 tsp oil
• 1 bay leaf
• 2 onions, finely chopped
• 1 tomato, chopped

Step by step instructions to prepare Gavran Chicken:

Start with making the Green Masala:

In a mixer/grinder add ginger, garlic, green chilies, and coriander leaves. Add little water and grind it to a fine paste. Green masala to make Gavran chicken is ready. Set it aside.

Marinate the chicken:
In a mixing bowl, combine chicken, turmeric powder, salt, and the prepared green masala. Marinate the chicken for 30 minutes. Keep it aside.

Prepare the Gavran chicken Kala Masala
• Dry roast coriander, cumin, cloves, cinnamon, peppercorns, black cardamom, black stone flower, and green cardamom until aromatic.
• Transfer it to a plate to cool down completely.
• Dry roast the byadgi red chilies until they are crisp. Transfer it to the same plate to cool down.
• Grind to a fine powder. Do not add water.

Make the onion-coconut masala
• In a pan, add 2 tsp oil and heat on medium heat.
• Add onion slices and stir-fry it until lightly golden.
• Add coconut and poppy seeds and fry until it is golden.
• Remove it to a separate plate and let it cool down completely.
• Transfer the ingredients to a mixer or grinder jar. Add little water and grind to a fine paste.

Making the Gavran Chicken Rassa
• Heat oil in a pan over medium heat. Add bay leaf and onions. Saute until lightly golden.
• Add tomatoes and cook until they are soft.
• Add the marinated chicken. Stir-fry the chicken for 5 minutes
• Gavran chicken or gavthi chicken takes a bit longer to cook. You can pressure cook the chicken at this stage for 3 whistles to speed up the process. Here  I have used broiler chicken. The rest of the cooking process will be the same.
• Add the prepared gavran chicken masala powder. Combine and cook for 3-4 minutes.
• Add the onion-coconut paste and combine.
• Next, add water to adjust the consistency of the gravy.
• Taste and add salt.
• Cover and cook it for 15 minutes.
• Gavran Chicken Curry is ready to serve.
